Christa's Salmon Soup

1 large onion, chopped
3 tbs butter
1/4 cup flour
3 cups broth (veggie or chicken)
2 cups whole milk (can use 2%)
1 large sweet tato, peeled and cubed
1 bay leaf
1 tsp thyme (i would use more)
1 lb. salmon
2 broccoli stalks, cut into pieces
salt and pepper to taste

Cook the onion in butter until softened, add the flour and stir until smooth. Whisk in the broth and milk, then add the sweet potato, bay leaf, and thyme. Bring to a boil, reduce heat, and simmer, stirring occasionally. Add fish and broccoli and simmer until salmon is cooked (only about 5ish minutes).
