Chris' Bacon and Cheese Quiche
5 eggs
3/4 c milk
1 c grated cheddar cheese, divided into two parts
3/4 c chopped cooked bacon (about 1/2 pound)
1/4 c chopped green onion
1/2 chopped green bell pepper
dash of tarragon, salt and pepper
1 large unbaked pie shell
Preheat oven to 320°
Lightly beat eggs in a bowl
Add one half of the cheese, all other ingredients and mix gently
Pour into pie shell
Sprinkle remaining cheese on top
Bake at 320 degrees for 35-40 minutes or until the shell is cooked and a tooth pick inserted in the center of the pie comes out clean.
Variations:
• Use a variety of cheese types
• Go meatless. Omit the bacon and top the quiche with thinly sliced zucchini or other vegetables*
• For a creamer quiche use cream or half and half instead of milk and decrease eggs from 5 to 4.
• Be imaginative: add any of your favorite ingredients
