Clam Chowder
aka "Noisy Seafood"*
2 finely chopped onions
3 or more peeled raw potatoes, chopped
1 tsp thyme
2 cups water
2 cans of chopped clams, with liquid
4 cups milk
1 somewhat neatly cubed peeled raw potato (1/2 inch cubes)
Salt and pepper to taste
Optional: add a box of frozen corn when adding cubed potatoes.
Saute chopped onions and chopped potatoes in olive oil until potatoes start to
brown and onions are wilted. Add water and thyme, simmer for about 20-30 minutes
or more. Mix with an electric mixer to get out the lumps, add milk. Return to
gentle boil. Add clams, cubed potatoes, simmer until potato cubes are tender
but not falling apart. A little corn starch mixed into cold water may be added
to thicken the soup if necessary. This is best with whole milk, but who has any
of that around the house?
