Cornbread
In a medium mixing bowl, whisk together
1 cup milk
2 eggs
While continuing to whisk above ingredients, pour in slowly
1/4 cup melted butter
Blend throroughly. Set aside.
In another larger mixing bowl, blend together
1 1/2 cups yellow cornmeal
1 cup flour
1/4 to 1/3 cup sugar (depending on how sweet you want it)
1 tsp salt
2 1/4 tsp. baking powder
While stirring, slowly pour the wet ingredients into the dry ingredients, mix thoroughly.
Grease with butter a 8 x 8 or 9 x 9 glass or other heavy pan. *
Pour batter into the pan, bake on the top oven shelf at 450° for 20-25 minutes.
Top of the bread should be golden brown and crunchy when done. Test with a toothpick inserted in the center.
Let sit a few minutes before attempting to cut. It will be hot!

* Aficionados prefer to bake it in a cast iron skillet, greased with bacon grease.
* Philistines can just bake it in an aluminum cake pan, sprayed with Pam.
