Start with eggs that are at least a week old. Very fresh eggs are harder to peel. If you want to make nice-looking deviled eggs with centered yolks, lay the eggs on their sides overnight in the refrigerator. Doing so will center the yolks.
Place the eggs in a pan just large enough to hold them in one layer, and cover with 1 1/2 inches of cold water. Add 1 tablespoon of salt to the water - that's supposed to seal any cracks in the eggs. Partially cover the pan, and bring to a full rolling boil.
Cover the pan completely, reduce the heat to a simmer, and cook for 30 seconds. Pull the pan off the heat and let it stand, covered, for 15 minutes. Drain off most of the hot water, place the pan the kitchen sink, remove the lid, and let the cold water run into the pan until the pan is full.
Using tongs, remove the eggs from the pan and place into a bowl full of a mixture of ice cubes and water. If the ice cubes melt, add more. Cool the eggs completely. Peel and eat!
