Florence Fisher's Lemon Meringue Pie

Pie Filling:
1 cup sugar
6 tablespoons flour
2 egg yolks
1 cup water
Juice of two lemons (1/4 cup lemon juice) (some grated rind can be added)
lump of butter the size of an egg


Meringue:
egg whites (at least four or more) *
3 tbsp powdered sugar
pinch baking powder

Cream together sugar and egg, add flour and water and cook in double boiler until thick. If grated rind added, cook it too. Cool and add lemon juice and butter.

Pour into previously cooked pie shell.

Have ready egg whites beaten stiff with the 3 tbsp powdered sugar and pinch of baking powder. Spread smoothly on pie and brown lightly.

Joy of Cooking says to bake meringue at 325° - 350° for 10 to 15 minutes.
