Marinated Onions and Cucumbers
Combine in large bowl or stockpot:
1 large onion, thinly sliced
2 quarts cucumbers, unpeeled, thinly sliced
2 tablespoons canning salt
Let stand for two hours, drain
Add:
3/4 cup sugar
1/2 cup vinegar
The rest of the recipe simply states "Freeze, will remain crisp." Perhaps it can be chilled and used as garnish within a few hours.
