Pancakes, Grandma Sue's
2 cups flour
1/4 cup sugar
1 tsp baking powder
1 tsp baking soda
3 tbsp melted butter or 3 tbsp olive oil
2 cups sour milk *
2 eggs
Combine dry ingredients into a large bowl.
Combine wet ingredients, then quickly mix into dry ingredients.
* To make sour milk, add about 2 tsp lemon juice and 2 tsp apple cider vinegar
to glass 2-cup measuring cup. Add enough milk to make 2 cups. Let sit until slightly
curdled. Heat briefly in microwave to speed up process, if desired.
Makes about 20 good-sized pancakes.
