Peanut Butter Meat
(East Indian Saté)

1 tablespoon ground coriander
1/2 tsp ground pepper
1 chopped onion
2 cloves, garlic, peeled
1/2 cup soy sauce
1/4 cup lemon or lime juice
1/2 cup peanut butter
1/4 cup brown sugar
1/2 cup peanut or olive oil
Dash cayenne, or Tabasco sauce

2 pounds meat (beef or boned chicken) cut into cubes

Whirl all ingredients except meat in blender until smooth.

Pour over meat. Let marinate at least two hours, overnight in refrigerator works well.

String meat on skewers, grill over hot coals until brown but not dry.

Serve over rice with remaining marinade.
