Pie Crust (Classic Recipe)
NOTE: This is the classic family recipe for pie crust. It assumes smaller pie pans and no decorations on top. I have committed a gross heresy and created an updated recipe that provides ample crust for two 9" single-crust pies, plus enough leftover dough for decorations.
1 pie:
2 cups flour
1/2 tsp salt
1/2 tsp baking powder
2/3 cup shortening
4 tablespoons ice water
2 pies, or one double-crust pie:
3 cups flour
3/4 tsp salt
1 tsp baking powder
1 cup shortening
1/3 cup ice water
Follow the pie recipe for baking instructions.
For a baked empty pie shell, puncture crust in several
places after rolling it out and putting it in the pie pan. Bake at 450° for
12-15 min.
This recipe is not that much different than commercial pie crust mix. It
is, however, excellent when made with bacon grease as half the amount of
shortening.
